Our citric acid is granular, and has the look and feel like granular sugar that were all familiar with.  The citric acid is a translucent white crystals and is a tart acidic taste.  Its slightly hydroscopic and melts at 307°F.  The citric acid is manufactured using a submerged fermentation process from a glucose and /or sucrose carbohydrate substrate.  It’s produced in accordance with good manufacturing practice and is considered “GRAS” Generally Recognized As Safe by the Food and Drug Administration (FDA).
